Flow of the Course

A single omakase typically moves through ten to fifteen nigiri, bridged by tsumami, yakimono, and shirumono that connect one neta to the next. Each stage opens the palate for what follows; the chef adjusts the order to the day’s fish and the guest’s pace.

On Aged Neta

The essence of Edomae (江戸前) sushi is not simply slicing the freshest fish — it is designing flavor through time and handling. At TAKUMIGON, neta that arrived this morning sit beside fish that has been aged with intent, and the contrast in texture is part of the course. Fatty tuna develops a yielding, almost melting structure over several days; white fish is ice-aged to lift inosinate and draw out umami; kohada is cured with salt and vinegar in the Edo manner, offering an acidity raw fish cannot reach.

Pairing Philosophy

The right drink with sushi is one that does not cover the grain of the fish. We most often suggest a dry junmai daiginjo, a mineral-driven Chablis, or a Pinot Noir — wines and sake that let the neta speak. In the later half of the dinner course, as umami deepens, we move toward wines with more structure to meet it.
